TASTING NOTES 

This Barossa Valley Shiraz has all the bells and whistles! Great pedigree fruit from a single vineyard site in the sought after Marananga sub region of the Barossa Valley. Hand-picked, cold-soaked, wild fermented then pressed to mature in a mix of new and aged French and American oak – simple. Low cropping, great soil, minimal intervention in such an instance, less is just so much more.

COLOUR

Deep purple with a violet hue

NOSE

Aromas of pungent crushed dark berry fruit, amid notes of earth, vanilla, toasty oak and a faint hint of clove spice.

PALATE

A smooth, rich palate of stewed plums, ripe boysenberry and black cherries up front draped in sweet vanilla and toasty oak. These primary characters provide fleshy support through the palate where they meld with subtle traces of chocolate, espresso bean, leather, spice and subtle mint, all complimented by a savoury touch of meaty complexity. The finish is long and generous with the taut acidity continuing through to embrace the abundant ripe, dry tannins and culminate with the soothing warmth of a pinch of black pepper

WINE MAKING

Hand-picked in early March 2018. 20% of the fruit was left as whole bunches, the remaining fruit was all destemmed with 25% of this portion left as whole berries to promote the fruit. The must was chilled for a three-day cold soak, then allowed to warm and begin ferment naturally to provide some complexity and funk. At 8° Be’ we inoculated the ferment to ensure it fermented to completion. Once dry it was pressed to 40% new American oak and the balance to 1-2yr old French oak for 18 months maturation, followed by a light filtration prior to packaging.

FOOD PAIRING

Enjoy with a well marbled rib eye steak or equally at home with a well-prepared beef short rib or smoked brisket. Don’t discount enjoying it whilst enveloped in a comfy leather chair with some matured hard cheddar or gouda cheese and a good read
