A fine wine showing depth of flavour, restraint, and intricate balance. Delightful to drink now, or worthy of exploration over the next 5 to 10 years.

TASTING NOTES


As it is poured, this wine fills the air with enticing red fruit aromas. The wine itself has a classic Pinot Noir translucent ruby hue yet it possesses a deep glistening crimson core. The depth of its hue is mirrored by the depth of fruit on both the nose and palate. On the nose, aromas of rhubarb, stewed strawberries, and cherries, both morello and maraschino, are contrasted by tones of scorched earth and gravel. Ripe red plum and dark red cherries coat the front and mid palate as a blood orange acidity caresses the sides of the tongue. At the back of the palate waits a silky, yet ever so slightly powdery tannin that prolongs the luscious flavour long after your first sip. An underlying power lies in reserve in this wine and as such it will only continue to benefit from cellaring.

NOSE

WINE MAKING

All batches are handpicked and cooled in vented crates beforehand sorting and destemming to small rectangular open fermenters. Approximately 15 to 20% of whole bunches are included in the fermentation. Gentle pneumatic plunging throughout the fermentation allows for optimum extraction of flavour, colour and tannin. One puncheon per fermenter is run off at 4º Baume to complete the fermentation in new oak. Between dryness and 7 days of maceration each batch is basket pressed to French oak puncheons (500lt) ~ 40% is new. The separate parcels are matured on lees, in the oak for 6 to 9 months before settling in tank. After blending, the wine receives minimal fining and no filtration before bottling.
