Mad Fish Cabernet Merlot (12 per case)


 Madfish Cabernet Sauvignon Merlot is crafted to produce a wine with a complete palate profile. After crushing, the grapes are fermented in stainless tanks with traditional pump over to help extract colour, tannin and flavour. Maturation in French oak barriques for 8 months produces a wine packed full of ripe fruit flavours and savoury oak tannins.

COLOUR

Deep dark purple-red, with dark red hues

NOSE

Enticing nose awash with vibrant red and black fruits, supported by hints of raspberry, blackberry, mocha and rosemary. 

PALATE

The mouth-watering palate offers great depth of flavour – soft forest berries and coffee mingle with graphite and a minty earthiness. Silky, powdery tannins leave a long finish with a lingering dark berry aftertaste. A wine of eminent approachability, with great integration and structure.

FOOD PAIRING

Cabernet Sauvignon from South West Australia, with its bright fruit flavours, soft tannins, and rich body, complement meat based dishes representing many styles and cuisines. This wine is also great with hard cheeses.

VINTAGE NOTES 

The long warm summer produced a good healthy crop and allowed us to harvest at our leisure. Acids, tannins and flavours were very good across most varieties. The Shiraz fruit had excellent structure and flavours and was the highlight of the 2017 vintage.
