Gipsie Jack has a made a come back with Rose after being put on the back burner for 8 + years … Made under sufferance by Ben and John, the girls in the office once again had some influence ! Parcels of premium Dolcetto fruit from our Pasquin Vineyard in Langhorne Creek is the rebirth of the Gipsie Jack Rose and the end result is one the girls are very happy with, as we hope you are.
TASTING NOTES
This wine has a beautiful rose pink colour. Very lifted aromatics of rose oil, florals, hand crafted boiled lollies and strawberries and cream. The palate is textured and balanced between sweetness and acidity with the acid contributing to a nice clean finish.

WINE MAKING
The fruit was machine picked, destemmed and crushed to press, spent some time on skins to get the vibrant pinky salmon colour before being pressed. Cold settled, racked, fermented cold to retain aromatics. Post ferment the wine was racked, stabilized and then bottled.
