TASTING NOTES
Light pale pink in the glass. Watermelon and rose water aromas super crunchy apple on the palate with a touch of creamy texture (thanks to Grenache fermented in barrel), hints of strawberry and watermelon, super dry and lip-smacking acidity on the finish to leave you only wanting more!!

WINE MAKING
Hand Harvested Montepulciano from a vineyard in Hallett's Valley, with a small amount of very old vine Grenache. The Montepulciano had extremely minimal skin contact and was immediately destemmed and pressed to tank, where natural/wild ferment occurred as the juice warmed. Fermented to complete dryness, then settled, racked and bottled in quick succession.
The Grenache (about 10% of the blend) was handpicked earlier than the Monte and pressed into seasoned French Oak barrels, where it underwent natural fermentation, to create a creamy texture and enhance the beautiful mid palate of the finished blend.
Both wines were fermented to complete dryness, with the Grenache spending 3 months in barrel prior to be blended together with the Montepulciano prior to cold stabilisation and bottling.
