Winemaking: Harvested during the cooler evening hours to preserve its vibrancy and full fruit expression, this variety, typically late to mature, was treated with care. The fruit underwent a 10-day skin contact late in the season and was meticulously fermented at temperatures ranging from 20 to 22 degrees Celsius. Hand-plunging occurred twice daily to extract the deep, robust, and delectable qualities expected from this variety.
