Opening with white peaches and cashews, it opens up to grapefruit and caramelised lemon & limes. This is an austere wine, full of stone fruits, cashews, citrus and honey flavours. There are vanilla and toasty notes from the French oak. The oak is beautifully integrated and adds a lovely texture to the palate. The cleansing acidity gives this wine structure and a wonderful length on the finish. Cellaring in proper conditions will give more complexity for those who like a bigger richer style.

Sweet berries, particularly mulberries and blackberries, mingle with star anise, nutmeg and a hint of white pepper. Just like the nose … sweet berries up front balanced with savoury spices. Velvety soft and supple, both the fruit and oak tannins give this wine a beautiful and complex structure. The acid balance builds to the back palate to give a concentrated yet lingering finish. Sand PR Shiraz 15

Shiraz 2015

Tasting Notes

Perfumed with lifted berry fruits – especially blueberries and underlying spiciness. Notes of Szechuan pepper, cinnamon and nutmeg. Elegance and generous on the palate. It’s full of blueberries, black currants and black cherries with notes of star anise and mocha. Structurally, the fine grain tannins and acid work together, leading to a long supple finish. This wine holds more in reserve and will only improve with age, but is lovely to drink now. If you can, give the wine some time in the glass and watch as it opens up. Cellaring potential of ten to fifteen years plus from the vintage date.

Sand PR Cab Sauv 16

Cabernet Sauvignon 2016

Tasting Notes

A powerful and complex nose, full of dark berries and spicy, mocha notes. This wine is intense and complex, it will keep evolving in the glass. Up front there’s blackberries and cassis. It’s perfumed with a floral lift and has a definite savoury edge. The French oak adds another layer with cedar and mocha notes. The tannins are powerful, yet also chalky and soft. Underneath there is a refreshing acid balance, which combines with the tannins to give a wonderfully long and lingering finish with a beautiful line through the palate. With 70% new French oak, this wine is still so young and whilst remarkable now, with careful cellar maturation for 15 years or more, this limited release.  Prendiville Cabernet Sauvignon will certainly reward the patient. (A harmless deposit may form in the bottle during cellar maturation and decanting is recommended prior to serving).
