WINE MAKING

This Chardonnay is produced from fruit grown on a single block from the Yarraland vineyard in Chirnside Park, Lower Yarra Valley. It has been crafted with minimal intervention, using natural fermentation, no fining and only a single filtration before bottling.

The fruit was chilled overnight then whole bunch pressed and the juice went straight to a mixture of new and used French oak barrels. A small portion of the grapes were fermented on skins to add texture and mouthfeel. The wine stayed on lees until blended and received a single, gentle filtration prior to bottling.
